Gourmet Crositini Antipasto…

You don't always need a well stocked pantry to make some really great afternoon wine and cheese hour(s) bites. We grilled Vidalia onions last night with our Grilled Filet Mignon dinner, so we had leftover onions. I made a basil pesto a couple weeks ago, and had a tomato on hand as well as some shredded Parmesan, Monterey Jack and Romano. I happened to have a Salametti so I added thin slices atop a few pieces.

I'm never without some type of crusty bread (see bio) so when I come across a great crusty loaf, I buy it and freeze half. So today I thawed the bread, topped it with my basil pesto, grilled onions, sliced tomato and shredded cheese, popped it into a hot oven for about 15 minutes and voila! My idea of a perfect snack with a glass of wine. It's all about creating something from what's in your fridge, freezer or pantry… Bon Appetit!
