Baby Spinach Salad with Local Goat Cheese and Balsamic Fig Dressing

A few of my favorite things: St. Helena's Kitchen's Fig Balsamic Vinegar (very unique, hands down, THE best) with walnut oil (emulsified with a touch of Dijon), local Maine goat cheese with pink peppercorns from Seal Cove Farm, baby spinach, pomegranate seeds and Toasted Pepitas all come together in a fantastic salad. The goat cheese balances the tart and sweet Balsamic dressing perfectly! Note the heart shaped pink peppercorn in the goat cheese?
